Garlic Butter Herb Pork Chops with Zucchini – As delicious as it sounds, this complete Paleo meal with juicy pork chops comes together in no time. Cooked in a buttery garlic herb sauce with zucchini, you just need one pan with 5 min prep — It’s quick, easy and effortless!


INGREDIENTS LIST FOR THE LEMON HERBED BUTTER PORK CHOPS

  • 3 pork chops, boneless
  • 3 tablespoons butter
  • 5 garlic cloves, minced
  • 1/4 cup freshly chopped oregano
  • 1 teaspoon fresh thyme, chopped
  • Salt and fresh cracked pepper, to taste
  • 2 to 3 medium sized zucchini, diced
  • Fresh chopped parsley, for garnish (optional)
  • Lemon slices, for garnish


DIRECTIONS

  1. Season pork chops with salt and pepper on both sides. Melt butter in a medium sized skillet over medium heat. Add the garlic, oregano, and thyme. Add the pork chops and cook for 4-5 minutes on each side or until pork is cooked through. Remove pork chops and set aside on a plate.
  2. Add the diced zucchini to the same pan and season with salt and pepper. Saute for 2-3 minutes or until tender. Add pork chops back to the pan to reheat for a minute or so and serve immediately garnished with lemon slices, topped with a shaving of butter, a drizzle of lemon juice and more parsley or oregano. Enjoy!
