Every now and then Dave and I get stuck in a rut of food ideas. Our new ideas just aren’t flowing as easy as the normally do. Before the creation of this meal, we were in such a rut. That is until our girl Savannah suggested a stuffed burger!! Stuffed burger?? YES! What hadn’t we thought of that?? (I blame the darn rut!)

And just like that, Dave was off with inspiration. It doesn’t take much for him to throw a meal together and this one was amazing!! He used most things we already had around our kitchen and BOOM, our avocado cream cheese stuffed burger was born.


The avocado cream cheese filling is so creamy and perfect that you don’t need much else to go with this burger. Also, saving some avocado to top the burger with was delicious. I like heat in my foods so we also topped it with fresh jalapenos from our pepper garden. Or what was left of our pepper garden after the bunnies got to it. Just call me Elmer Fudd this summer, chasing “pesky wabbits” away!! Even so, this burger was a great change up from our normal meals. Savannah saved the day! We loved it and hopefully you do too!

Ingredients:

  • 1 lb of Ground Beef, at room temperature.
  • 3 oz Cream Cheese
  • 1 Large Avocado
  • 1/4 Medium Onion
  • 1 Jalapeno
  • 1 tablespoon of Ghee or Olive oil
  • Garlic Powder

Directions:


  1. Dice Jalapeno and Onion. Cut avocado in half. Set one half to the side and slice the other in thin slices, lengthways.
  2. Heat a Skillet over medium heat and add tablespoon of oil/ghee. Saute jalapeno and onion for 4-5 minutes until they begin to soften. Remove from heat.
  3. In a small mixing bowl, Microwave cream cheese for 30 seconds to soften. Mix in jalapeno, onion, and avocado and mash together with a fork. Season with salt and pepper. Set mixture in the fridge until ready to use again.
