It’s fall and all the autumn inspired treats are calling my name, starting with these apple cinnamon cookies! But for real, you better go make some because they’re about to be a new favorite!

It’s a good question. We don’t typically eat dried fruits too often because they can spike blood sugar, but sometimes you just have to indulge a little. You can make these cookies with either dried or fresh apples, but I recommend dried or dehydrated. They taste delicious with fresh apples, but the excess water makes the cookies soften after they bake and they fall apart. So, if you plan to enjoy these apple cinnamon cookies with a group of people in one day, go ahead and use fresh apples, but if you are trying to make them last a bit longer, use dried or dehydrated apples as they keep much better.


Ingredients

  • 1/2 cup dried apples, chopped
  • 1 egg
  • 1 cup almond butter
  • 1/2 cup coconut sugar
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 350° Fahrenheit, and line one large or two medium-sized baking sheets with parchment paper. Prep apple as noted. 
  2. In a large mixing bowl, whisk egg. Add almond butter, coconut sugar, cinnamon, baking soda and vanilla. Use a large spoon to mix until batter forms.
