I’m an avid gardener, which means I deal with a LOT of zucchini. Zucchini is one of those crops that yields a TON of produce per plant and if you’re not careful you just might end up with more than you intended. Last summer we had a bumper crop and I was forced to find new ways to use the stuff besides in my delicious Double Chocolate Zucchini Bread or my Greek Yogurt Zucchini Bread.

Ingredients
- 3 cups cooked rice
- 1 cup shredded zucchini
- 1 cup shredded cheddar cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt & pepper to taste
Instructions
- Mix all ingredients together in medium mixing bowl.
- Serve warm and enjoy!
