Paleo Almond Butter Bread Recipe with Chocolate Chips

Happy Monday!  I hope you all had a fabulous weekend.  We spent most of the day Saturday “out of town” and we sure spent a lot of money in one day. Long story short – My 13-year-old daughter is pretty apathetic about almost everything but she started playing the cello this year in Jr. High and she really likes it.



INGREDIENTS

  • 1/2 cup coconut flour
  • 1/2 Tbsp baking powder
  • 1/4 tsp Real Salt
  • 1 cup almond butter
  • 1/2 cup applesauce
  • 2 eggs
  • 1/2 cup almond milk or milk of choice
  • 1/4 cup pure maple syrup
  • 1/2 Tbsp vanilla
  • 1/2 + 2 Tbsp cup dark chocolate chips
  • 1/2 tsp coconut oil

INSTRUCTIONS

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl whisk together coconut flour, baking powder, and salt
  3. Add remaining ingredients (except chocolate chips and coconut oil) and mix together well
  4. Once combined, stir in 1/2 cup chocolate chips
