We are quite fond of watermelon around here, if you have yet to notice, ha ha! Our Watermelon Key Lime Slushies that I shared with you yesterday were a hit with the kiddos. The colors from watermelon are so bright and cheery. I knew rain was on it’s way this week and wanted to have some desserts for lunches that would brighten our days. These Watermelon cupcakes with chocolate chips and homemade buttercream icing were perfect for lunchboxes this morning.

While shopping at Target last week, I noticed that Betty Crocker has made their watermelon cake and icing available again this summer. I guess everyone is really enjoying the bright colors of watermelon inspired desserts.  I have plenty of regular white cake mixes on hand in my pantry and we prefer our own buttercream frosting on our cake desserts. So I decided to make our own watermelon cupcakes. These do not have watermelon flavors in them, they just resemble watermelon with the addition of mini chocolate chips for seeds and red and green food coloring to make them colorful.



Ingredients

  • Cake:
  • 1 box White Cake Mix + box ingredients
  • 3/4 cup Mini Chocolate Chips
  • Red and Yellow Food Coloring
  • Frosting:
  • 1 cup softened Butter
  • 3 cup Powdered Sugar
  • 3 tbsp Milk
  • 1 tsp Vanilla
  • Green Food Coloring

Instructions

  1. Preheat oven and line muffin tins with paper liners.
  2. Prepare batter according to box directions.
  3. Add just a touch of yellow color and enough red to achieve watermelon pinkish color.
  4. Fold in chocolate chips until distributed.
  5. Fill liners 2/3 full and bake according to box directions for cupcakes.
