KIWI AND RASPBERRY CHIA PUDDING

Take my oldest son for example.  We spent many Saturdays coaxing him to join a team or go to soccer practice when he was younger.  He was nervous, hated playing on teams where he didn’t know anybody and was just a home body.  Fast forward to middle school and he is head over heels in love with basketball.  Since January 1, he has practiced 100 shots per day, every. single. day. I am so proud of him.  Last night he tried out for a year round team without any friends doing it with him.  That’s a huge step for him.  He tells me every day all he wants to do is play basketball. I love that boy.
As a mom, you can nag them, plead with them, encourage them, show them by example and even bribe them, but in the end, it must happen within them.  Just hold on, have faith and keep on keeping on!



Ingredients

  • Chia layer:
  • 1/2 cup chia seeds
  • 1 1/2 cup coconut milk
  • Pink Layer:
  • 1 cup frozen raspberries
  • 1/4 cup coconut milk
  • 1 banana
  • Green Layer:
  • 1 banana
  • 1 cup spinach
  • 2 kiwis
  • 3 pieces of ice or more
  • 2 tbsp coconut milk

Instructions

  1. First, stir together the chia seeds and 1 1/2 cups milk.
  2. Place in fridge for at least two hours to set. When set proceed with recipe.
  3. Place the chia pudding layer in the bottom of two glasses.
  4. For pink layer, mix all ingredients in a high-powered blender. You want the mixture to be thick so the colors don't run together when you layer them in your glass.
  5. Gently pour the pink layer over top of chia layer.
