Baked Banana Bread Donuts with Chocolate Peanut Butter Glaze

I have never really been a huge fan of donuts. My kids on the other hand love them! My older 2 kids have gone to the same preschool and every single morning we drive right by a Dunkin Donuts. Without fail, they have both asked every single day “mom can we stop and get a donut?!”.
I will say that I do love baked donuts. Maybe I like them cause they seem a bit healthier cause they are baked. Now that I think about it, healthier and donut really don’t even belong in the same sentence. So just to clarify I do not think nor would I suggest that these are healthy but they are better than a fried donut!



Ingredients

  • banana bread donuts
  • 2 bananas, peeled and mashed
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons vegetable oil
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 tsp salt
  • chocolate peanut butter glaze
  • 3/4 cup powdered sugar
  • 1 1/2 teaspoons light corn syrup
  • 1/2 teaspoon vanilla
  • 1 tablespoon water
  • 3 tablespoons cocoa powder
  • 1/4 cup peanut butter

Instructions

  1. Preheat the oven to 350ºF. Prepare a donut pan by spraying with cooking spray.
  2. In a mixing bowl, combine bananas, sugar, egg, vanilla, and vegetable oil. Mix together.
  3. In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients into the wet mixture and mix until batter forms and combined.
  5. Transfer the batter to a gallon size Ziploc bag. Snip the corner and pipe the batter into the donut pan. Fill each donut to be about 3/4 full.
